The Spice Man & Epices de Cru

A week or so before my first speedy trip to Toronto, I met Costas Halavrezos and his neighor & friend Ruth at the Old Brewery Market. He now distributes a wonderful collection of spices from around the world hunted down by the Spice Hunters at Epices de Cru, headquartered in Montreal. You have to check out the website, where you'll find, not only the fantastic spices and aromatic blends, but brilliant recipes and stories on their blogs - a National Geographic trek around the world searching out the finest spice treasures anywhere.
Costa had so many wonderful choices of gift boxes and individual spices, my head was spinning. In the end, I couldn't resist the gift box (well... it was a gift to me from me and I don't feel guilty in the least)... my kit - Caris et Masalas - curries & masalas, included Sri Lankan Black Curry, some Jamaican curry, some Martinique Colombo Spice Blend, some Mauritius Masala, some Trinidadian Curry, and some Singapore Curry.
After much sniffing of tins, I decided on the sri Lankan Black curry and whipped up Kalu Mas Curry with just a few changes to their delicious recipe... no lemongrass and I used fenugreek leaves as I had no curry leaves on hand either. It still was spectacular.
Their aromatic Basmati Rice Pilaf was equally delightful, just as presented and so simple to do. Don't you just love the toasted poppy seed garnish? The sweetness of the rice - cardamom, cloves, cinnamon & coriander does it well - was the perfect partner for the tangy curried beef - the tamarind paste really added zing to the dish.
And a very cool trick to keep your blend fresh... The note in the box advised me to blend the entire little tin so that all the individual whole spices would be part of the mix you added to your dish. As you can see, just dipping a spoon into each jar would mean missing out on one or more fragrant spice. If you do have any left, pour the ground spice back into the little tin and freeze until the next time.

Now I have to decide which blend to try next... and hope that Costa is still at the market so I can purchase some of the individual spice tins as well.

A Thai Cooking Class Party

I just did a post about reducing stress around the holidays...especially if you're the host!

I forgot one other way to give a great party for a small group - host Cooking Class Party in your own home - I now facilitate them in the Halifax area, but you probably can find them in your neck of the woods. Everyone gets in the act and you never have to worry about doing anything other than inviting the guests and providing the beverages.

Elizabeth & Chris invited some of their friends over on Saturday for a Thai Themed dinner and I had to share the photos (collage above) and menu.

Everyone arrived around 6 and we ate and cooked, ate and cooked and finally just ate. They all had a great time and everyone got in the act....and I didn't see a stressed--out look in the place!

As luck would have it, I had just received a copy of Basic Thai Cooking, by Jody Vallasso...plus Basic Japanese Cooking, which I'm sure will be equally fantastic.. Naturally I started flipping through the Thai cookbook for ideas for the party and all the recipes above except for the Summer Rolls came from it. You can read my review of the Thai cookbook, but the bottom line - all plates licked clean.

A Whole New Perspective on Curry

Truth...I'm embarrased to say, the first time I ever tasted curry was in London, England when I travelled there for the first time at the ripe old age of twenty one. Somehow, it never made it into my mother's repertoire and even when I was boss of my own kitchen, I didn't make it very often.

My take...curry = Indian; the more Southern the hotter the dish; lots of work to prepare (of course it is when you make a giant feast and invite the world), so best eaten out.

Gradually my horizons expanded (through restaurants at first) Pad Thai, Singapore Noodles, Jamaican goat curry roti,...plus now you find curry dishes on just about every menu of every restaurant.

That said, I'm still learning and the latest in my treasure trove of cookbooks is Curry Cuisine which does an awesome job of explaining which countries cook which curries, what spices each uses and tons of other interesting info (like Japan first started cooking with curry through their British connections in the mid 19th Century. Check out my review for the whole scoop.

And, how uninformed of me to lump "curry" with India...Northern India and its many regions, Southern India and Pakistan are all so varied in their use of spices and cooking methods, not to mention Vietnam, Laos, Caribbean....

I tried this Pakistani Lamb & Tomato Curry, expecting lots of heat and was pleasantly surprised with its mild and mellow flavors.
I served it with another Pakistani dish - Chickpea & Rice Pilau, thinking I'd need it to counter the anticipated HEAT. It was gloriously aromatic and quite a lovely combination. Now I have to choose my next cultural curry...I wonder where I'll end up?

Loving Ethnic Foods

Recently I promised more details about a great new find...Gourmet Cash & Carry. Think ethnic food shopping a la Costco. But let me back up a bit. The store is owned by CLIC International, the largest importer, distributor of ethnic foods to North America. Head Office and giant warehouse are in the Montreal area and they currently have seven stores across Canada and are also distributing into the US.

I'm sure I've driven by their Halifax operations a gazillion times without realizing what a gem we have here. Great selection and excellent prices...what a fantastic combination. I'll be writing a more detailed account for foodtv soon, so stay tuned for that.

In the meantime I thought I'd share ingredients for last night's dinner (recipe at the top of this post)...

The leafy molokhia is similar to spinach but has an earthier taste and a slimier texture...sounds bad, but really...it was as delicious as Tony, the manager of Gourmet Cash & Carry said it would be. It's his recipe at the top of the post. The Seven Spice mix is a blend of allspice, cinnamon, black pepper, coriander, ginger, clove & nutmeg. I'm really going to love it in lots of stews and just sprinkled over fish and chicken as it's grilling.

On the right in the photo you can just make out the frozen artichoke bottoms. I've looked high and low for some in the city. There's a fantastic recipe I'll be making tomorrow - Sicilian Stuffed Artichoke Bottoms. And although Jennifer Joyce, author of Small Bites (more about that tomorrow too), does explain how to start with whole artichokes , I preferred to have someone else do that for me.

These perfectly sundried olives are definitely another favorite find...and less than $3 for this medium sized container...half the price of elsewhere...even if you could find them.

This blurry shot is just half of one shelf unit of spices. I forgot to mention that the store is divided by ethnic groups...Middle Eastern being the largest, but you will also find Indian, Asian, Latin American as well. 1400 products from all around the world!

Just a few of my favorites...rose water & orange blossom water.

Dried fruits like papaya & mango at a price that won't break the bank!

As for savory...some authentic Mexican Mole for that chicken dish I'm dying to recreate from my honeymoon all those years ago in Cancun.

I could go on forever, but you'll just have to wait for the next installment.

Presto Pasta as a Side

Actually, I confess...I really wanted to make Shannon of Simply Cooking's spaghetti with spinach & garlic as a side for my main dish tonight....but it's her entry for Presto Pasta Night, hosted this week by the awesome and tireless..(read her post to see what I mean) Inge of Vanielje Kitchen.

We're having Short Ribs in Red Wine (& Port). The "port" is in brackets, because I forgot to buy some and just used extra wine. It's from the new Bonnie Stern Friday Night Dinners cookbook which I wrote all about and some roasted cauliflower (400F/200C for 20 minutes) drizzled with olive oil and sprinkled with Aleppo pepper (it's Middle Eastern, a gorgeous red and my new favorite condiment). The simple egg noodles with garlic and spinach would be perfect, but....

I needed a different pasta option and decided to go with part of another one of Bonnie's recipes. The Moroccan Tomato Sauce used in the Chicken Fattah (which was superb, I might add) may look like ordinary tomato sauce, but the cumin, honey, lemon juice and Aleppo pepper, make it anything but. Fortunately, I had some left over and it's perfect with the red wine braised short ribs that just melt in your mouth.

Chinese Take Out or Cook In...Up to You.

Hopefully I actually made this in time for Mochachocolata-Rita's Chinese Take Out Event.

I've been obsessing over the need for bok choy and fermented black beans since seeing Mark Bittman's video back in March.

First I obsessed about fermented black beans, thinking I'd find them at the new Asian market downtown...no luck - but they actually did order some for me. That very morning (before the Asian store) I bought some baby bok choy, but naturally without the fermented beans...and then getting sick, well ultimately they were thrown out.

But today I have all the ingredients and here's the dish...

In a rush to get this post out to Rita...I served the dish in a bowl. But here are another couple of dishes that would round out the meal...

Turmeric Rice - Peelay Chaaval

Turmeric Rice – Peelay Chaaval
From Madhur Jaffrey’s Indian Cookery
Prep time: 5 minutes
Soak time: 30 minutes
cook time: 35 minutes

Ingredients:
15 oz/450ml basmati rice
2 pints/1.2 l plus 1 pint/600ml water
1 tsp salt
¾ tsp ground turmeric
3-4 whole cloves
1” cinnamon stick
3 bay leaves
3 tbsp butter or ghee (Indian clarified butter) cut into small pats

Directions:

1. Put rice in a large bowl and rinse several times, until the water is clear. Drain and pour 2 pints/1.2 litres fresh water over the rice and let it soak for 30 minutes. Drain rice in a sieve.

2. In a large heavy-bottomed pot, combine the rice, 1pint/600ml fresh water, salt, turmeric, cloves, cinnamon and bay leaves. Bring to a boil.

3. Cover and reduce the heat to very low. Cook for 25 minutes without lifting the lid. Turn off the heat and let the pot rest (still covered) for another 10 minutes.

4. Add the pats of butter to the rice and gently mix with a fork.

5. Remove the whole spices before serving.

This is a great rice to accompany any grilled meat, fish or chicken dish.
