Pasta with Italian sausage, mixed beans, and spinach in a porcini tomato sauce.
Prep time: 5 minutes
Cooking time: 15 minutes
2 Italian sausages removed from skin and mashed
1 clove garlic, minced
2 cups baby spinach
1 can mixed beans, drained (red kidney would do as well)
1 cup or so tomato sauce (I used porcini)
a splash or 2 of red wine
1. Boil noodles and drain
2. In the meantime, in a large skillet, sauté the minced sausage until no longer pink and add spinach. Toss until wilted (2 minutes) and add garlic. Toss until you get that fabulous garlic aroma and add the drained beans.
3. Add the sauce, toss several times, add a little wine and taste. Heat for 5 minutes or so.
4. Serve over the pasta.
