Prep time: 5 minutes (well, it depends on how long it takes to look through the fridge)
Cooking time: 15 minutes
Serves 2 but just add more pasta and more spinach to make it feed more people
Ingredients:
2 cups cooked pasta
1 tbsp olive oil
2 chicken breasts, cooked and diced
1/2 cup roasted red peppers
2 roasted garlic cloves, mashed
1/2 cup pitted Nicoise olives, chopped
2-3 tbsp pesto
1/2 cup white wine
1-2 handfuls baby spinach leaves
1/2 tsp red chili pepper flakes
freshly grated Parmesano Reggiano cheese
Directions:
- Heat pasta in the microwave for a minute (or steam over boiling water until hot)
- In a large skillet, heat olive oil over medium high heat and add chicken. Saute for 1-2 minutes, enough to heat the chicken, not dry it out.
- Add peppers, olives, garlic and toss.
- Pour in wine and add pesto and mix to create a "sauce". Toss everything together, add spinach and toss until the spinach begins to wilt.
- Add cheese and chilis and taste for seasonings.
Serve with a simple salad and enjoy.
