Cookbooks, Recipes & Stuff

I know it looks like I'm not doing too much writing other than about Presto Pasta Nights. And, while I do love pasta, I have been busy working on some of my other sites too.

Lots of fantastic cookbooks have come my way, provided by publishers, authors and their agents. Truth is, I get lots of requests from suppliers of one sort or another to review their books and products, but I never agree to review anything I wouldn't love to try and I only share my views on the ones I really do love. I don't get paid for reviews although I do get to keep the books and products - lucky me!

Because the gift giving and party hosting season is nearly upon us, I thought I'd share some of my latest treasures so you can see if these books are right for you. Check them out at Cookbooks4EveryKitchen. In fact, I've been trying to organize all my favorite cookbooks, each with a post including a recipe or two and why I love the book. You can find the recent recipes at RecipesFrom4EveryKitchen along with all the others I make.

The latest trend seems to be about eating locally grown and eating seasonally and a number of my latest books reflect that. Others are for those of us with little or no time to cook with meals that can be be put together quickly, economically and healthfully. And the third type of books you find on my shelves are what I call the foodie travelogue books....the ones you are just as happy to sit and read as you are to cook the dishes from around the world.

My biggest challenge, with so many books to go through and share...is letting go of each one and moving on to the next. You can't imagine how many little sticky notes I have in each! This week I'll be cooking up some of Lucy Waverman's awesome recipes from her latest book A Year in Lucy's Kitchen: Seasonal Recipes and Memorable Meals The Sicilian Pasta with Roasted Cauliflower was brilliant and on tap for later today is her Spiced Cauliflower Soup with Spinach.

If you live in Ontario and have ever visited the LCBO (Liquor Control Board of Ontario), then you've seen the fantastic - and FREE Food & Drink magazine, which is truly my all time favorite of all my favorite magazines. Too bad it's only available at their outlets in Ontario. Well, why am I mentioning this? Lucy Waverman is the food editor and I've loved her take on eating, cooking and hosting for a long time. That's why I jumped at the chance to check out her latest book and the recipes I've looked at and tried are as good as I expected...maybe even better.

I've also been busy adding to AskRuth, where I provide kitchen tips and answer questions about cooking. The latest, in fact, given that it's Fall around here and that means chilly weather and the need for slow simmering stews and braises. And the latest Food & Drink (my cousin in Toronto was kind enough to send me the Fall issue) had an article on braising tips that I had to share. If you have any particular ideas for a post, let me know and I'll be happy to do a little research and share.

Because I feel I'm baking challenged, the next article will be about knowing when eggs and butter should be cold and when they should be at room temperature.

Now I'm off to enjoy the last of the sunshine...apparently it's going to rain tomorrow. Oh well, another chance to read all my wonderful new treasures.

Where's My Avocado?

Did you ever have one of those days when a particular ingredient inspires a dish? Did you ever have one when you whip up most of the dish only to discover that you don't HAVE that ingredient? SIGH!

I was taking a break and happened to flip to Chef at Home. Chef Michael Smith (who always inspires me) was in the middle of making a tuna avocado salad and my mouth started watering at the notion of avocado.

But how was I going to incorporate pasta ...after all it is Thursday and tomorrow is another Presto Pasta Night Roundup. This week's host is Haalo,of my favorite Cook (Almost) Anything and I'm really looking forward to her second time at hosting. So that means .... you still have some time to send her your pasta treat. But I digress...back to my sad story. Being inspired, I cooked up some cute farfalle, opened a can of tuna, chopped a few sun dried tomatoes, about 10 oil cured black olives, a handful of cilantro leaves and two spring onions. So far so good...a drizzle of good olive oil, a splash of rice vinegar and a grinding of pepper. Finally (I always leave the avocado chopping to the very end of the preparation so it won't discolor....and that's when I realized that my avocado was dead. I don't mean just a little over ripe...I mean...beyond help.

That said....although I will have to go hunting for more avocados...my tuna, pasta dish was delightful.

How do you compensate when you find out too late that a key ingredient is missing...run out to the store?...find another ingredient?...change the dish entirely?...or put it in the fridge until you can get whatever is lacking?

Pete's Frootique Five Year Celebration Bash

If you live in Halifax, or planning a visit this weekend, then you have to check out this great foodie event....Pete's Frootique in downtown Halifax is celebrating Five Fabulous Years.

If you're not from around here...think Whole Foods....high quality foods - a foodie's dream...I've mentioned it often...finding elusive garlic scapes, their other location (equally awesome) then try to figure out a way to get here on Sunday! Who know's we just might bump into each other.
There will be Jazz musicians providing entertainment, cooking demos (including one with one of my favorite local chefs...Craig Finn), spotlights on local suppliers and who know what other surprises are in store.

Shipwright's Cafe & Chef Calvin Burt

I promised to share more of my wonderful experiences in Prince Edward Island (PEI) and somehow an entire month just whizzed right by.

So here's the first of my installments...a truly exceptional morning with Chef Calvin Burt (local boy - actually, his family has been in PEI since the 1700s. (His dad a fisherman and his mom a fantastic cook) - at his magical home and cafe...a historic 1880's farmhouse in the heart of fertile North Shore Country in PEI. Do check out his video tour.

Sadly, my photos of his garden didn't turn out, but the bounty did make its way to the kitchen. So let's move indoors...Chef Calvin greets us all in his kitchen where we'll be baking some famous PEI Potato Bread with him.
But first a quick tour of his cafe/home... the library turned dining room upstairs during the season and back to a family room in the winter.

Good For What Ails You Pasta

If you're like me, when you have a cold, nothing seems to have any flavor. I've been under the weather for more than a week. Nothing serious, just the usual symptoms - stuffed up nose, coughing, no sleep and worst of all...no taste! This post is not to induce sympathy....well...okay, perhaps a little.

Rather, it's to share my "cure"... at least for the no flavor part. I've naturally been dragging myself around due to the lack of sleep and so, any serious cooking...the kind where, if you have to really follow a recipe and pay attention during the cooking process was not going to happen. Thank goodness for the frozen batches of broth (chicken and vegetable )in the freezer, cans of beans in the pantry and sundry herbs and greens in the fridge for days when nothing but soup will do.

But now I actually want something more substantial and naturally pasta comes to mind. Pasta with lots of "in your face" flavors, since my taste buds and sense of smell is still lacking. The recipe for success...

1. Pick your favorite shape pasta (that's the visual comfort factor)...mine is cute farfalle or...as we used to call them when I was a kid "bow ties".

2. Choose your favorite over the top flavors...super salty, super spicy, super tangy (things you will actually be able to taste....my choices....sundried tomatoes in oil, black olive tapenade or oil cured black olives, lots of garlic and red chili pepper flakes, lemon - zest & juice, bitter greens).

3. Minimal cooking, and served up in a pretty bowl.

A Marriage of Old & New for Presto Pasta Night

I couldn't resist these cute little Sacchettini that I saw at Sobey's this morning. I've been addicted to these cute little pasta sacks filled with all sorts of great combos...like Potato & Leek or in this case...Brie & Roasted Garlic for a while now. And since they take 2 minutes longer than it takes to boil water...it's perfect for "one of those" days. In fact, I spent all afternoon, hunting through a great many of my cookbooks ...and I have a lot...and do a little surfing on the net as well.

And what did I come up with? Strange as it seems, it all started last night. I'm getting over a cold and yesterday I felt that I needed some comfort food from my childhood...lots of thoughts, like chicken soup...not the right "hug" factor for my soul...shepherd's pie (lots of options)....not enough energy to whip it up (not to mention the fact I didn't have any ground beef in the house)...and suddenly, it came to me....my mother's Creamed Salmon On Toast (of course we had another name for it that is totally inappropriate to mention here).

When I was growing up this was one of my family's favorite meals. In those days it's what my mother served when money was tight. Imagine what she'd say if she knew that a tin of salmon no longer costs $0.25! But I digress...my dad....each and every time he ate her creamed salmon would tell us that she really should open a restaurant and call it "Dolly's Creamery". It is delicious. And that's what my Honey and I ate last night for dinner.

Since there was some left...and after all my hunting for the perfect "sauce" for the brie & roasted garlic sacchettini....I used the creamed salmon and it was a fantastic combo. Too bad I didn't make more. We both would have had seconds.

Raincoast Crisps

I'm often sent emails with offers to try this or that product. And while I'm open to the idea of trying something new, I'm still very choosy. After all, I still live my my father's rule...if you have nothing nice to say, say nothing...and my mother's rule...no lies!...and I don't want to disappoint anyone ...that's my own personal challenge.

This time, I was approached by Raincoast Crisps, beautifully packaged artisan crackers. I'd seen them at Pete's Frootique (Halifax's own specialty food emporium) and always meant to try them anyway so of course I said yes.

You can find out all about Lesley Stowe (she is a Parisian trained chef who set down roots in Vancouver) and her incredible crisps, a glimpse at her cookbook, and lots of delicious sounding recipes - complete with mouth-watering photos and even some videos on her gorgeous website. If you're lucky enough to live in or visit Vancouver, you can pop into her shop.
I was very excited when I got my package of Cinnamon Raisin (good thing she sent two boxes as we quickly started eating the first box the minute it arrived. I decided that I would venture out to Pete's and get another variety to try as well....I chose the rosemary raisin pecan crisps and we spent a lovely afternoon trying out different munching combinations....Hard to tell from the photo, but here's our "menu"....Applewood Smoked Cheddar, our favorite Ran-Cher goat cheese (with cayenne pepper & garlic), some Tangled Garden Apple Sage Jelly and some sliced apples picked at Elderkin Farm in the Annapolis Valley...each topping tried separately and in combinations on both kinds of crackers. All I can say is that each crispy bite was delightful. I'm already wondering what to create next. If you're lucky enough, you might find a local shop that stocks them...they are definitely worth hunting down. Or you could order them on line.

Empassioned Discussions about Food

One thing I love about Sunday mornings, is the ...shall we say...empassioned discussiones my Honey and I have....usually over some article or other from the Sunday NY Times. This week was no exception, but an issue much closer to my heart....food...and the state of the Nation or at least the huge divide between locally sourced and big conglomerates.

Jamie Oliver's on Another Mission

It's no secret that I'm a huge Jamie Oliver fan. I've written about a few of his projects, waxed on about his books, and recreated many of his recipes. Now he's made it to the cover of today's NY Times, Sunday Magazine with a great article about his newest venture...well, read the article! You can even check out his achievements.

La Bomba is More Than it Seems

For at least the last year, I've become obsessed with eating local (as local as I can without becoming a fanatic)...shopping at farmers' markets and supporting local producers, paying attention to where food comes from at supermarkets, trying to "stick to the season" when I cook.


One of my new favorite cookbooks is Earth to Table: Seasonal Recipes from an Organic Farm . What can I say?....well I've already said alot about it. I'll be reading it, rereading it and definitely cooking from it often. In fact, the first recipe I made... La Bomba has already made it's way to my table in two very different forms....a simple spread as an antipasto with a delicious rustic loaf of Julien's bread (top of post)



...and as a filling for a simple omelet. I've already sent some home with my daughter and son-in-law who were over last night for dinner and she can't wait to make it herself. It's a droolingly delicious marriage of so many Fall ingredients....eggplant, fennel root, roasted red peppers, olives, mushrooms, all sauteed with some garlic and spices that really will knock your socks off. I think my next dish will be with pasta.


And a quick aside about my market expedition today...it's Thanksgiving weekend here in Canada...at 7:45 A.M. this morning the line ups were already longer than I'd ever seen them...especially at those vendors selling turkeys and "fixin's". We're getting together with "the Neighbors" and divvying up the meal. He's got the turkey in the oven as I write and I'm about to make some Harvest Soup, a Spicy Salad , Roasted Fall Veggies (Brussels Sprouts, beets, carrots, mushrooms, cauliflower, eggplant, onions and parsnip), garlic mashed potatoes, because what else would I sop up all his gravy with? And dessert will be a pumpkin pie, I'm told.

Sicilian Pasta with Roasted Cauliflower for Presto Pasta Night

I couldn't resist this fantastic recipe from Lucy Waverman's new book A Year in Lucy's Kitchen: Seasonal Recipes and Memorable Meals which is phenomenal and I'll be writing all about it very soon, but it is Presto Pasta Night tomorrow and this Sicilian Pasta with Roasted Cauliflower is absolutely spectacular and perfect for the season. In fact, it's so good I want to make it again tonight!

The secret ingredients...well they wouldn't be secret if I told you.... capers and anchovies and even if you and/or your table mates turn their noses up at anchovies, they won't really taste them but they will say "More, please!"

A Deja Vu Day

How weird was yesterday....let me tell you....

I went to the supermarket at 7am ...it's a 24 hour grocery and I often do my shopping for staples after dropping my Honey of at work. Yesterday, my intention was to get some salmon or some eggplant and cremini mushrooms to make a few dishes from some of my new cookbooks.

The fish section doesn't open until 8am...I forgot and the only fish, in packages, didn't look so fresh. Apparently the eggplants and cremini didn't make the delivery either, so what's a girl to do?

Suddenly, as I passed the ground beef, I had a craving...shepherd's pie, but not the standard variety I normally do. This time I wanted some Moroccan twist to it with, perhaps a good dash of Ras el Hanout (a wonderful Moroccan spice mix) and some chopped dried apricots.

So how "Twilight Zone" is this... November, 2006...Moroccan Style Shepherd's Pie...exactly how I wanted to make it. And I didn't even remember that I had created such a dish before!
Has your mind played tricks on you like that? And now I remember one very excellent reason for writing this blog!

The Best Thing About Fall

Actually, there are many things to love about Fall...the glorious colour parade of leaves....squashes of every type and size...all those root vegetables...chilly weather. I know what you're thinking..."Is she crazy?" and yes, I'm sure I'll be whining come January. My daughter was telling me just today that I seem to suffer SAD (Seasonal Affective Disorder) more than most in the middle of winter...but I digress.

Let me clarify...what I mean by loving chilly FALL weather is...it's time to warm the house with long, slow, simmering soups and stews. Today was chilly and rainy and I didn't even want to head out to the grocery store.
I've been thinking about lentils and wondering what to do with my baby beet greens for a week now. I used the beets last week and didn't want to discard the tops. Often I saute them with a little olive oil, garlic, and a splash of balsamic vinegar and serve them as a side with roasted salmon or chicken, but I didn't feel like foraging through the freezer. It's tiny but packed...and frankly...scary at this point.
So I rummaged through the fridge and found, in addition to the beet greens, a half a bulb of fennel root (I like it better than celery for the "base" along with onions and carrots) some fresh thyme...too bad I didn't have any fresh rosemary on hand. Then I scrounged around the pantry (actually my hall cupboard, but that's for another story) and found some diced tomatoes, my lentils (the black turtle beans are now soaking in a pot - what will I do with them tomorrow?)

So without further ado....Fall Lentil & Beetgreen Soup....just lean in closer to the screen...can't you just smell the heavenly aroma?

La Cucina Italiana

I've had a few comments about the magazine La Cucina Italiana which has been Italy's premier food magazine since 1920 and only a couple of years (at least in my house) in English for the North American marketplace. It's filled with thoughtful articles...this month has a wonderful one on the Slow Food Movement which started in Italy 20 years ago. Fantastic recipes and more about honey. If you're into salt cod, or want to be, you can learn all about it.

I've got a few recipes earmarked, but I thought I'd share an favorite of mine. I adapted Spaghetti Con Speck e Pangrattato last February. Since I never did find speck, I use Serrano Ham and pancetta, sliced 1/4" thick and diced.

Check out their website for other great recipes like this Beef Braised in Red Wine - Brasato al Teroldego....this willl definitely be one of my "go to" dishes for the long cold winter ahead.

My First Issue of La Cucina Italiana Arrived

Lucky, lucky me. last October I entered a contest...something I never do, don't ask me why....over at Blog From Italy. The request was for an Autumn soup with ingredients that could be found in Italy for all their food testers.
My Roasted Beets & Pumpkin Soup took third prize....thank you, thank you, thank you. And today I received my first issue (the prize was a one year subscription, so now I don't have to go hunting for it in stores) of La Cucina Italiana and I'm going to spend the afternoon planning next week's dinners and drooling all over the magazine.

It’s my turn again to host Presto Pasta Night . While it may not have been the most entries ever, I guarantee you'll love them all. And the scope...from main to dessert... there's something to appeal to your pasta cravings.
Update: Somehow this tasty Tortellini in Tarragon Mushroom Sauce sent in by Graziana of Erbe in Cucina slipped through the cracks last week. It's too tasty a treat to leave out. Try some for yourself and see.

Haalo of Cook (Almost) Anything is back with a quick and easy and oh-so-gorgeous dish of Tagliatellini with Salsa Verde Anchovies. Has me drooling and hunting for the anchovies.
A funny thing about this next entry....Tigerfish of Tezcape , another of my favorite PPN regulars, sent this link by mistake. It was originally part of last January's roundup ....a mouth-watering dish of Chicken, Shrimp & Greens..with Pasta, of course and I couldn't resist posting it again.
This week she really made some heavenly looking Chili Tuna & Corn Pasta. Hey, this is the kind of goof up I wait for!...a two-fer!
Nic of Lemon & Cheese, just started her Masters program and yet still managed to whip up this Spaghetti with Chicken, Spinach, Blue Cheese & Beans. Looks very tasty, and a great energy dish...something we all could use. And next time, Nic...remember that wine is for drinking!
Anna of Morsels & Musings, another great PPN regular definitely took pasta to a new high...Falooda...what can I say, except "Cheers!" Who says pasta is just for the main course?
The Happy Cook over at My Kitchen Treasures, definitely knows the way to my heart. I could eat her Scampi with Linguine every single day and not get tired of it!

Somehow, Marye of Baking Delights and I got our signals crossed. I couldn't help but add her fantastic looking Braised Chicken with Farfalle.


And finally, my turn to share a dish...I couldn't resist doing something a little different and this Spaghetti Pizza caught my attention. Can I say what little piggies we were...we gobbled it all up even though the recipe says it feeds four!
