And what did I come up with? Strange as it seems, it all started last night. I'm getting over a cold and yesterday I felt that I needed some comfort food from my childhood...lots of thoughts, like chicken soup...not the right "hug" factor for my soul...shepherd's pie (lots of options)....not enough energy to whip it up (not to mention the fact I didn't have any ground beef in the house)...and suddenly, it came to me....my mother's Creamed Salmon On Toast (of course we had another name for it that is totally inappropriate to mention here).
When I was growing up this was one of my family's favorite meals. In those days it's what my mother served when money was tight. Imagine what she'd say if she knew that a tin of salmon no longer costs $0.25! But I digress...my dad....each and every time he ate her creamed salmon would tell us that she really should open a restaurant and call it "Dolly's Creamery". It is delicious. And that's what my Honey and I ate last night for dinner.
Since there was some left...and after all my hunting for the perfect "sauce" for the brie & roasted garlic sacchettini....I used the creamed salmon and it was a fantastic combo. Too bad I didn't make more. We both would have had seconds.

This looks so delicious! I am going to have to make that creamed salmon recipe just for this. Now if only I could find some brie and roasted garlic sacchetini....well maybe I will just have to pick up some wonton noodles and make my own ravioli filling.
