Presto Pasta Nights #99

A very special thanks to Erin, The Skinny Gourmet for last week's over the top dedication to hosting. Six weeks before he was scheduled to arrive, Liam arrived last Thursday. Fortunately for us, Erin had started compiling her roundup as the entries came in. She actually put the finishing touches on it while sitting in the hospital waiting for contractions! To all of you who contributed recipes...thanks for sharing them with the rest of us and making Presto Pasta Nights as special as they always are. But enough mush...on to this week's fantastic entries, counting 4 very different lasagnas and 3 recipes with artichokes, plus...well, check it out for yourself.

The Food Hunter tried to submit these tasty choices last week, but Erin's baby beat her to the punch, so she's first up with two choices for us. Which would you make first? Black Olives with Mushrooms

or Spinach, Mushrooms & Roasted Peppers...dilemma, dilemma.

Singing Horse is a first timer here at PPN - Welcome and I do hope it's the first of many visits. Just check out her wonderful Seitan Curry Pasta. It looks amazing.

Joanne of Eats Well With Others made a Rachel Ray Spinach, Artichoke Ravioli Lasagna for those of us who can never get enough pastas in one dish.

Glenna at Fridge Full of Food shared one of my favorite dishes - Roasted Vegetables (with pasta of course)

Kevin my very favorite Closet Cook made an absolutely heavenly Salmon Noodle Soup. What a great combo of flavors and colors.

Sara, the Cupcake Muffin extraordinaire, came up with Campanelle with Vodka Sauce that looks wonderful.

Kitchenetta of Got No Milk always has a tasty treat for us and this Bean & Pasta Soup is perfect for the chilly weather.

Sara of I'm a Food Blog made a great Turkey Meatball recipe I know I'll be adding to my collection.

Colleen from Foodie Tots shared this glorious Carrot Risotto, which technically isn't pasta...but rather a rice dish. That said, it was too good NOT to add here.

Pam of Sidewalk Shoes came up with a fantastic recipe for all that pureed squash in her freezer - Baked Shells with Winter Squash - gorgeous!

Wiffy of NoobCook shares a great step-by-step Beef Lasagna for all of us. One of my favorite comfort foods - and the star of my first dinner party way back when.

Katie of Thyme for Cooking always makes me laugh, and then she makes me hungry. She also shares some lasagna, but this one is quite different to any I've had...Tuna Lasagna, but I'm definitely going to test it out on the family.

My good friend Sara of I Like to Cook shares a fancy Mac 'n Cheese with Tomatoes & Chorizo ...and a fondness for good old Kraft KD! But check out her fancy bowls - I love them and her step-by-step directions for the fancy version.

Liz at Sauced is a first time PPNer. She writes hysterical posts, takes beautiful photos that will have you drooling AND makes awesome dishes...like this (Crabless) Artichoke & Sundried Tomato Linguine.

Ben at What's Cooking, like many of us, sometimes is at a loss for a quick pasta dish...then he found this Spaghetti with Brown Butter and shares it with all of us. Thank you and thanks to Peter for the original recipe.

Marye of Baking Delights is another wonderful regular and this week she also makes lasagna, and this one is another show stopper...Artichoke Pesto Lasagna. Check out the gorgeous photos.

And finally...my own creation...Five Cheese Whole Wheat Tortellini with Spinach, Mushrooms and (the star) sun dried olives.

Next week marks a milestone for Presto Pasta Nights....100 roundups!!!

Not only do I hope you all plan on sharing your special (or favorite, or easiest, or last minute ) pasta with us, I hope you'll get all your friends to do the same. And for those of you who don't have a blog...no worries - email me your recipe and I'll post them on Once Upon a Feast and add them to the roundup next Friday. Send links or recipes to ruth(at)4everykitchen (dot)com by Thursday and check back for the roundup next Friday.
