It looks like a glorious day outside my window. The temperature with wind chill is something like -20C (-4F), but we will eventually get out of PJs, bundle up and venture out for a long walk because the sunshine is spectacular!
I love lazy weekends. Even though we still wake up early (we're serious morning people), there's no rushing about. Everything is done leisurely-almost in slow motion....checking out what's new on LinkedIn, Facebook & Twitter and all the on-line papers with a cup of freshly brewed coffee in my favorite mug (you can see it peeking out on the right side of the photo) with a scene from The Hockey Sweater, illustrated by my very talented cousin Sheldon Cohen . It always makes me smile.
Eventually one of us remembers that we should have some breakfast. Often, I make frittatas (you can find a wide variety here), but what to do when there isn't enough time because you haven't thought ahead and now you're both starving and don't want to wait the 20 minutes it takes to bake? I'm sure the SCRAMBLE was created in just such a moment....all the ingredients of a frittata, prepared in minutes by just sauteing a bunch of your favorite things until they're nice and browned, whip up some eggs with your favorite pesto, or herb, or cheese, throw it in the pan and stir occasionally until the egg is set. Don't forget to put up some toast before you add the eggs, this dish doesn't take very long.
Today's additions: sliced mushrooms, coarsely chopped onion, diced cured chorizo sausage, a heaping spoonful of Roasted Red Pepper Pesto and a handful of pitted sun-dried black olives, coarsely chopped. Sprinkle some fresh cilantro on top just before serving.
