Finally, Thai Shrimp & Chicken Cakes

I have been moving Ainsley Harriott's Fresh and Fabulous Meals in Minutes from one side of my counter to the other and back again, waiting until I had all the ingredients for these awesome Thai Style Shrimp & Chicken Cakes with Thai Sweet Chili Sauce. Either I didn't have chicken breasts or I ran out of fresh cilantro...Anyway, finally it all came together last night.

I've written about his book and have already tried lots of his dishes-each one better than the one before. In fact, tonight we'll be trying another - the Curried Sweet Potato Soup with Chicken & Spinach - more about it tomorrow...but I digress...back to last night's supper.

First, a secret guilty pleasure...sometimes I love making a meal of ...what I often think of as appetizer food. And to digress again...whenever I'm invited to a feasting formal function...wedding, Bar Mitzvah, fundraising dinners...I would be very happy foregoing the main meal and just grazing forever with the little bites served beforehand. Who can resist all those finger foods - little spring rolls, tiny quiches, tons of large shrimp and the dipping sauce...I'm drooling, but I could go on forever.

Back to last night...I also have another book called Small Bites ...need I say more?! I'll be writing about it soon, but I've been dying to make the Sicilian Stuffed Artichoke Bottoms for, what seems like forever. And I finally found some frozen ones at Gourmet Cash & Carry.

And to round off the meal, although the Asian Broccoli Coleslaw doesn't technically count as appetizer food, it went splendidly with all the other flavors.

So many delicious recipes. The shrimp chicken is really interesting. I would never have though to blend up the shrimp and use it as a coating.

Your recipes here would make a great addition to our wedding event. Something to consider.

Sometimes appetizers are the best part of the meal. There are so many times when I go out to eat that the appetizers look and sound better than the main entree! I think my favorite non-traditional dinner, however, would have to be breakfast for dinner. Pancakes, french toast, eggs, frittatas. I just love breakfast foods.

Joanne, I don't do breakfast dinners often - usually when I'm really stressed or not feeling well. My favorite takes me back to my childhood - scrambled eggs and Heinz baked beans. Thanks for sharing.
