One of the best things about stir fry...besides the fantastic flavor combinations and the ease and speed of preparation...it's great over rice, in a bowl all by itself...and, of course, if you're like me and the rest of the Presto Pasta Night fans...over pasta of your choice.
In my house, it's also an opportunity to hide some veggies that are less than popular. I personally am a huge eggplant fan, but it's really not a favorite of the rest of the gang. So I was really excited when I made a fantastic marriage of eggplant, baby bok choy and chicken in my very easy and soooooo unbelievably tasty homemade Fermented Black Bean Sauce.

It was great over soba noodles and just as tasty on its own the next day for lunch.
