It's a funny time of year...it's officially Spring and yet Winter doesn't really want to let go. Our line up this week reflects that...hopeful Spring dishes starring asparagus and artichokes and body & soul warming wintery dishes too...lots of lasagna and a couple of surprises.
RuthE of Ruth's Kitchen Experiments is a new PPNer and first in this week with a lovely dish of Sweet Pepper Pasta. I really love how she roasts her peppers.
Georgia of Oh Kitchen, What You Won't Do for Me? is back with a great way to use eggplant (my family is not nearly as much a fan of the purple prince as I am, in fact if I want them to eat it, I have to hide it). This one's a keeper at my house...Eggplant Parma Lasagna.
Judith of Think On It shared some Bucatini with a Simple Tomato Sauce...Do you think it was a hit?
Katie of Other People's Food shares this awesome Orzo Risotto with Sausages & Artichokes. One of my favorite Spring veggies.
Patsy of Family, Friends & Food joins us again with a perfect entertaining dish of Spinach Lasagna Rollups. How festive!
Dharm that great Dad, Baker & Chef shares a lovely creamy Pumpkin Soup with Macaroni. One of those for still wintry weather.
Katie of Thyme for Cooking has an interesting post (Just curious, which "non-standard" animal would you eat?) and a positively delicious Spaghetti with Pesto Meatballs. And a great read as usual.
Bellini Vali of More than Burnt Toast is definitely thinking Spring with this glorious looking Pappardelle with Asparagus & Salmon.
Ramona, the Houndstooth Gourmet shares another lasagna dish with us - I guess winter really isn't over yet! Check out her Lasagna a la Mona.
Elly of Elly Says Opa! is back too. She shares a mouthwatering dish of Steak & Pesto Pasta. Are you drooling too, or is it just me?
Kitchenetta of Got No Milk has a really spectacular looking dish this week - Ditalini with grilled chicken and tapenade sauce. Doesn't it tempt you?
Tara of Should You Eat That? is back with a Donna Hay dish of Spinach & Ricotta Cannelloni... and the answer to "should you eat that?" is definitey YES!
Miri of Room4Dessert recreated her favorite restaurant dish of Farfalle with Eggplant Honey & Soy Sauce. I wish I could do that. Typically, I just make return visits!
Sher of What Did You Eat? also has a dish that just screams SPRING! Isn't this Spring Asparagus & Sugar Pea Pasta Salad just perfect!
Mochachocolata-Rita whipped up this slurpingly delicious dish of Beef & Chinese Kale with Rice Noodles...and all on her way back from the doctor! Hats off to you and feel better.
Gattina of kitchen Unplugged has a great story and a heavenly dish of Home-made Pasta with Beetroot & Walnut Sauce.
Nuria of Spanish Recipes shares a first for Presto Pasta Nights - check out the Rabbit Noodle Casserole!
Our Kitten In the Kitchen has a real treat for us...Squid & Chorizo Linguine. Check it out! I bet you'll be drooling too. And fyi, I'm one who gets the fishmonger to clean the squid so I don't have to.
And me...I've finally given up on complaining about no Spring (besides my grandfather used to say that there was no use in complaining since no one would help anyway), so I'm just cooking as if it really is here. Check out my tangy Sacchettini with Peas, Mint & Goat Cheese.

An impressive collection, trans-seasonal, using lots of seasonal ingredients. That's nice to see.
Has anyone else noticed that Dharm is never daunted at turning out what we think of as winter food in a place that never has winter?
OK, it's low carb time for me and there will only be zucchini strings for a while.
