Who says diets have to be bland and boring!? The other night we had an amazing Indian styled dinner that I must share. Whether you're dieting or not, I bet you'll love this meal.
The Indian-Spiced Chicken with Lime & Cilantro was adapted from fine Cooking Magazine January 2008
Peas & Mushrooms or Matar Makhani I've made before but for South Beach Dieting, I've swapped lite coconut milk for the cream.
Basmati Cauliflower "Rice" was also adapted from the magazine and it's the second time I've had some already on this trip down SBD Phase One.
All that's missing is the Nan bread....oh well, a girl can dream.

I was so excited to try the cauliflower "rice" the other night with a stirfry, but sadly the store was out of it when I went to pick some up. maybe next time!
