There are three things I love in desserts - vanilla, dried cherries and ....I love ginger, no I LOVE ginger, so when I offered to host Sugar High Friday , created by Jennifer, the Domestic Goddess- one of my favorite blogging events, naturally I chose ginger as the main ingredient. Of course that was many months ago and I wasn't on a diet....what to do, what to do.
So for those of you on the South Beach Diet(not the hard part, Phase One though) here are a couple you can enjoy too.
This Cassata Cheesecake was inspired by Chatalaine magazine and reminded me of a wonderful ( but definitely not diet-friendly) cake I used to make years ago. I had just finished South Beach Diet Phase One and although my honey loved the ricotta desserts, I didn't and how much jello can a girl eat anyway! So this was my celebration.
I even turned this Vanilla Rice Pudding with Dried Cherries into a gingery SBD friendly dessert too.
