A Dairy Delicious Dinner

I realize that this Thanksgiving Day weekend, (at least here in Canada) will mean lots of Turkey Dinners.  And I know I should definitely have posted this a week ago, right after we did the Yom Kippur Break Fast dinner.   Still, there are probably lots of you out there who don't eat turkey, and want some vegetarian (and a fish dish) ideas for your menu...

Of course, some of them... a lot of them, actually... where simple dishes with bounty from Joanna's garden and no recipes at all.  
Like the tomatoes cut in half and roasted at 400F/200C for 20 minutes or until soft and sweet and juicy.  Garnish with fresh basil leaves, a drizzle of good olive oil, balsamic vinegar and freshly ground black pepper and you have a stellar dish to serve.
Like this cucumber salad, which just needed a squirt of lemon juice, olive oil, salt and pepper and some fresh oregano.
Like her Swiss Chard & Leek Quiche... sauteed leeks and chard from the garden, store bought pie crusts... some cheese, some eggs... not sure of what else, but it was delicious.  FineCooking has at least 16 options with all the ingredients and directions.
And some of my tried and true, like the Chickpea & Fennel Salad with Arugula (on the side for those who don't enjoy the woodsy arugula flavor).
And Roasted Potato & Olive Salad (potatoes could have come from her garden, but were bought at the farmers market and roasted rather than boiled).
Joanna made the Quinoa salad, (which looks a lot like my Quinoa Tabbouleh).  I'm not sure of what was added to the cooked quinoa other that the red pepper and parsley from her garden and some crumbled feta, tossed, I think with a little lemon juice and olive oil.
Joanna also made some delicious artisan bread... no idea what she did, but it was delicious.  It kind of reminded me of this Whole Grain Rye Bread recipe I made from Healthy Bread in Five Minutes a Day.
For those who still feel the need for more recognizable protein, there was Roasted Trout with  Smoked Paprika on a bed of more Swiss Chard from her garden.  There are more fish options HERE if you need real instructions.
And last, dessert, camouflaged zucchini... Chocolate Zucchini Cake... so good, Dov, who will be four next month, asked if I could make it for his birthday cake.  If he only knew how good it is for him.

I love this great collection of veg recipes! The chocolate cake sounds like the perfect way to sneak veggies into someone.
