It’s my turn again to bring you a fantastic array of Presto Pasta Night dishes. Whether you're heading into Spring or into Autumn, you are going to love these....
First in is Debbie of Dining with Debbie. She just missed last week’s deadline, so I’m happy to share her fantastic dish of Curried Shrimp & Rice Noodles No photo, but if you close your eyes you can smell the coconut milk and curry.
GirliChef couldn't decide between pasta and pizza, so she did the most reasonable thing...she made Pizza Baked Spaghetti and it looks fantastic.
Graziana of Erbe in Cucina made a real treat with the potato harvest...homemade potato gnocchi! And she says it's simple to do. There's a link to a step-by-step "how to" and a couple of other sauces to go with the gnocchi.Val at More Than Burnt Toast has been busy volunteering her time with the Okanagan Gleaners (read her great post for details while you're drooling over her amazing Roasted Red Pepper & Goat Cheese Pasta.
Margot of Coffee & Vanilla used some of my favorite ingredients for this layered Spinach & Ricotta Tortellini with Baked Aubergine (always sounds more romantic than eggplant) salad.
Abby of Eat the Right Stuff used some of her homegrown tomatoes for this Raw Tomato & Basil Sauce. Looks amazing, even if her husband can't understand why anyone would put a cold sauce over hot pasta...never mind, I'll come eat a plateful, thank you.
Johanna of Green Gourmet Giraffe, from way down under, is just experiencing Spring. What I find even more amazing is the notion of heading out to pick a lemon off a tree! But I digress...even though we here north of the equator are heading into Autumn, this Spring Garden Pasta looks wonderful.
Tigerfish of Teczcape must know we're heading for Autumn and people are preparing for bouts of the H1N1 flu...I know this Chicken Macaroni Soup will be the perfect cure.
Pam of Sidewalk Shoes made another delicious dish using the tomato bounty...Pasta Puttanesca. I couldn't resist this photo of all her ingredients. I'm drooling...aren't you?
Joanne of Eats Well With Others has a most delightful fable to share AND a tasty dish of Linguine with Roasted Eggplant and Cherry Tomatoes - one of my fave combinations.
Little Inbox of Eating Pleasure shares this quick and easy...AND tasty looking Spirals with Mushroom Sauce. Get your forks ready!
Chaya the Comfy Cook shares this perfect Baked Pasta with Mushroom Sauce which will be perfect for cool Fall nights and freezing wintery days.
Somehow Haalo of Cook Almost Anything sent this picture perfect dish of Udon Soup and Prawns and it got lost in the ether world....So glad she resent it....because the "better late than never" expression says it all. Thanks Haalo for the second try.
And finally, my turn to share a dish...I was under the weather, so didn't do anything too spectacular...That said the Asian Style Sauteed Baby Eggplant over Fusilli was delish!

What a mouth-watering round-up! I really must get back to participating in this event now that we are going to be back to a normal schedule soon.
Mmm they sure look good! I can almost smell the food even just by looking at the pictures! For me, I don't need to understand why cold sauce is put over hot pasta, as long as it's delicious. I looove pasta so much! :D
