Last week's roundup had SEVEN different pestos and I went crazy over the weekend making batches. So thanks to everyone for helping me out. All those delicious pestos reminded me that I was out of one of my all time favorites...Roasted Red Pepper Pesto...so easy and soooooo good, I just had to add it to my collection in the fridge.
Summer is officially here...and the weather is acknowledging that with bright, hot sunny days and nights. I'm not complaining, just stating a fact. And having pestos and another favorite staple of mine...Grilled Vegetables (yes, even I of the "No BBQ", can grill vegetables) on hand. That means little or no cooking in the heat. Okay, the boiling water to cook up the pasta is hot, but we're talking 10-15 minutes here...so suck it up!
Pasta with Roasted Red Pepper Pesto & Grilled Vegetables
The entire meal, including the salad of Romaine Hearts, Fresh Herbs & Croutons (made with day old home-made Dakota Bread, cut into cubes and quicky sauteed with a little olive oil) took no time at all to whip up...another plus in the heat of summer.

Ruth, you should try roasting red peppers in the fall, freezing them in zip-locs (with their charred skins on). They keep well after a year and superior (IMO) to the jarred variety.
The pesto sounds very flavourful!
The roasted pepper pesto is fantastic...
and Peter, I'm with you, making your own roasted peppers is much better. This last year, that hasn't been an option around here though. Perhaps I'll come visit you for a care package ;D

Pasta is my choice of cooking in a hot day. Roasted peppers pesto sounds and looks (*drool*) yummy.
