An Unexpected Delight

I don't know where the time has flown. It seems like I just posted the 46th Presto Pasta Night Roundup and it's already Tuesday! The weekend was a wonderful blur. My daughter was supposed to drive to New Brunswick for the weekend with Boaz on business and we were just going to have lunch with them before heading out. That alone was an unexpected delight. Good thing I always have the fixings for a great salad!

But the weather was getting worse and in the end, she decided to cancel the trip and we had a wonderful, spontaneous sleep over instead!

Having unexpected guests staying over has its challenges, but I used to be a Girl Guide, so my motto is "Be Prepared". Air mattress that only takes a few minutes to blow up; Obviously there's always some pasta in the pantry and some lovely Potato & Leek Sacchettini in the freezer, herbs, salad stuff & eggs in the fridge. So here's what I scrounged up .....
Lunch

Huge Salad with cold salmon leftovers , lots of herbs, mixed greens, fennel root, artichoke hearts, cheese....lovely vinaigrette of balsamic apple cider vinegar
Dinner

Roasted Salmon with Chimichurri (because it was so good on the chicken this week)

Gingery Kale Stir Fry
Potato & Leek Sacchettini with Pesto

Joanna picked up the salmon and apple pie for dessert while my Honey and I babysat in the afternoon. Another treat!
Breakfast

Marinated veggie & Asiago Omelet

Freshly ground & brewed Just Us Mexican Morning Coffee

But the best treat was Bo's bath...check it out...

This all looks great, Ruth, but I am especially drooling over the kale. How delicious!

It was fun!

Elly, this was my first kale dish and I was surprised at how mellow it was.
