But the weather was getting worse and in the end, she decided to cancel the trip and we had a wonderful, spontaneous sleep over instead!
Having unexpected guests staying over has its challenges, but I used to be a Girl Guide, so my motto is "Be Prepared". Air mattress that only takes a few minutes to blow up; Obviously there's always some pasta in the pantry and some lovely Potato & Leek Sacchettini in the freezer, herbs, salad stuff & eggs in the fridge. So here's what I scrounged up .....
Lunch
Huge Salad with cold salmon leftovers , lots of herbs, mixed greens, fennel root, artichoke hearts, cheese....lovely vinaigrette of balsamic apple cider vinegar
Dinner
Roasted Salmon with Chimichurri (because it was so good on the chicken this week)
Gingery Kale Stir Fry
Potato & Leek Sacchettini with Pesto
Joanna picked up the salmon and apple pie for dessert while my Honey and I babysat in the afternoon. Another treat!
Breakfast
Marinated veggie & Asiago Omelet
Freshly ground & brewed Just Us Mexican Morning Coffee
But the best treat was Bo's bath...check it out...
