First Pasta of 2008!


I can't believe it, but it's true - this is the first pasta dinner we've had this year! The hardest thing about doing the South Beach Diet, Phase One is no carbs! Obviously that means no pasta. Hopefully my Presto Pasta Night friends will understand. It's been two weeks and we've been doing a less than perfect phase one, but now it's time to move on. Since we really haven't lost much weight (I actually haven't lost anything!, but that's most likely because I haven't done any exercise), I decided we'd start slowly.

I found a recipe for roasted mushrooms & garlic pizza on the back of my package of grated asiago cheese and it inspired me.

Multigrain Fusilli with Roasted Mushrooms.

It's so simple it's scary and all the earthy flavors of the mushrooms and roasted garlic work so well with the pasta. Even if I wasn't doing SBD, I'd use the multigrain pasta for taste and texture. So what are you waiting for....get a fork and dig in!

that pasta looks simply amazing! can you send over more about how to make it and maybe a couple other pastas you might have in your cookbook? I have been ordering my food from Celebrity Foods and I am always looking for way to spice up my food! I would appreciate anything you can send over.Thank You!

Jeez I can't believe you're keeping up Presto Pasta Nights while you're on a diet! I admire your will power!

Ruth, what's your deadline for these? I was getting ready to go home, make pasta, post about it and send you the link, but then I see you've already done the roundup and it's not even 2:00.

I'll be doing it anyway, and sending it for next week. : )

Cyndi, deadline is usually early Friday morning Atlantic Time. That's when I start putting it together and it's often up by noon.

That said, those that miss the deadline are first up for the following week - ;-) You could consider it super early or super late, depending if you're a glass half full or a glass half empty person ;-)

I can't wait to see what you've come up with.
