Easy, Wholesome Comfort Food



Well Bo and his mom are doing fine, but Grandma's a little under the weather with a cold. The hardest part is keeping myself from snuggling in that sweet little neck and kissing those chubby cheeks.

Lunch was just a quick wrap with some deli meat and fruit for dessert. And although we felt we should have a more substantial meal for supper, neither Jo nor I really were up to much. So supper was a joint easy effort.

Joanna used her bread maker to make and bake a tasty Sunflower & Cumin Seed Bread . The actual "work" time was about 5 minutes or so and I whipped up some

Leek, Mushroom & Spinach Soup that didn't take very long to put together but felt very nourishing for both Mummy and Grandma (Daddy liked it too) and a

variation on my Wicked Salad with tuna, hard boiled eggs, boiled potatoes, fennel root, olives, cheese, romaine hearts and fresh oregano with a red wine vinaigrette. All told, it was a delicious supper that was not only easy to make, but could be worked around our baby's schedule. All the elements were made when he was asleep earlier in the day and the dressing was added to the salad just before serving.

Thanks ladies, of course the freezing temperatures (-14 with a wind chill to make it feel like -30) isn't helping.
