That's exactly what happened last night. I took some downtime in the afternoon to whip up an interesting Zucchini, Mushroom & Bean Loaf and put it in the oven to bake. Once it was almost done, I just turned the oven off and left it in to finish the job on its own. I saved the leftover salad from the night before and just added extra romaine hearts and a little more extra virgin olive oil and red wine vinegar. The veggie loaf is a from a recipe in Better Food for Pregnancy. It's got lots of nutrients nursing moms need, like folate, fiber, iron and calcium. And it tastes yummy too.
I wonder what we'll come up with tomorrow.

The Star of Another Easy to Make Meal is Zucchini Mushroom & Bean Loaf
Having a new baby in the house means several things. First, there is now a new routine in the house that is pretty much exhausting, in large part just because it's simply so different than what was before. Plus everyone is tired with new sleep patterns - forget 8 continuous hours! Second, even if you're not exhausted the time just seems to fly by-feeding, changing, bathing, washing clothes, and ... All of a sudden it's time for grownups to eat - forget about time to get it ready! And third, often there will be the unexpected visitor who came to see the baby and you want to invite him/her to join you for dinner. Not only do you have to figure out what to make for dinner, you have to stretch the quantities somewhat.
