Another Weekend Herb Blogging Event - Spicy Spinach Stuffed Squash

Well it’s Saturday and time for one of my favorite events – Weekend Herb Blogging put on by Kalyn of Kalyn’s Kitchen. Normally,I can’t imagine cooking without herbs – or greens at least, but so far this weekend is not looking very herb friendly. In fact, after my grocery shopping run yesterday, which focused on ingredients to make some desserts for cookbook testing, plus the dish I’ll be making for my monthly Fife House community meal, we had the fastest, easiest thing I could think of.

Now before I share, let me preface by saying this is an anomaly. I rarely just open cans and heat things up but there are times when I’m rushed, frazzled or just too tired to get my brain around creating something wonderful. When I was a kid, this was an all time hit – hot dogs and baked beans and the dish my mother would make when she was busy baking or doing other things that kept her too busy to make a "real" meal for us. So it gets zero for nutrition and creativity, and a ten for nurturing. I hope you won't hold it against me and before you decide to never visit here again, check out how I redeemed myself.

Okay, that was bad, but while I was shopping – because I love this event so much and in order to reclaim my reputation, I looked for something that I could really contribute to WHB. And there it was - a beautiful pepper squash. My mind was racing to figure out what I would do with it. Here's the creation.



Spicy Spinach Stuffed Squash

Next time, I’ll actually serve it as a side with some of my Teriyaki Flank Steak. We liked this new creation a lot. I hope you will too and that it will cancel out the hot dogs and beans.

But really, we all (well most of us) slip sometimes. What's your fallback food?

Fallback food: grilled cheese with Campbell's tomato soup. It's ready in a flash and is reminiscent of my childhood.

So, YOU're testing the desserts, huh? (Good. Keep 'em away from me!) I'm already drooling, planning my weekend in LA--looking at restaurant menus and checking out the dessert offerings. Deprivation makes you do weird things.

BTW, I love beans and franks. We use different beans, but same concept.

Cyndi - I do the first round of tests before I send them off to my fabulous testers....like you. Grilled cheese is our other staple.

Kalyn, thanks - I love how versatile squash is. You can just load it up with anything and it's awesome.
