While I do love hard boiled eggs...they get boring after a while; frittatas...take too long for weekdays; and omelets...too much concentration at 6:30A.M..., I thought I'd share my new favorite - the scrambled egg wrap. Multi grain wraps slightly warmed in the microwave, surround eggs scrambled plain, with goat cheese, feta crumbled or shredded provolone; a little something spread on the wrap like roasted red pepper pesto, classic basil pesto, or what you see peeking out in the photo...Puerto Rican Ajilimojili . Something green like baby arugula or spinach adds a nice texture and flavor too.
Seriously, breakfast will never be boring again.

I really like my eggs scrambled with tomatoes and feta. Mmmm. Bulgarian is my favorite. It is softer and saltier. And I put it in a wrap to go.
I want mine scrambled with full fat brie laid on top, side of sliced tomatoes, please!
hot sauce is great in these as well. I'm a big fan of these as in my brother.

When I was expecting, I developed gestational diabetes (because I am OLD!)and was always looking for low-carb, high protein things to eat. Your roll-up would have been great. Instead, I'd resort to spreading a large slice of Swiss cheese with cream cheese, and topping it with a fried egg every morning. A roll-up of sorts, but yours looks and I'm certain tastes better.
Seriously, that looks great. I'd pay money to have that served to me in a restaurant.
