Pasta - The Only Meal When You're Too Tired To Cook

It's been a very busy week here....my younger daughter, Sharron, just left for Toronto early Monday morning and I spent every minute I could with her for the week or so that she was in town. Then there was the lovely wedding of my son-in-law's sister and her fiance (now husband) on Sunday. Check out how handsome Boaz looked. We'll all have to wait for the formal photos to be developed to see the full tuxedo effect. Sharron thinks he looks like a waiter here.

Between partying, babysitting, feeding last minute guests, this is how I felt when Boaz spent the day here on Monday....and this was the closest I got to having him nap. Too bad, Grandma was hoping she could nap too.

By the time yesterday rolled around, I was too tired to do much. Not a problem for dinner though....and that's what I love about pasta. It can be as complicated or as simple as you like.

You don't really even need a recipe...

1. Boil up some noodle or other...whatever you fancy (or more importantly, whatever you have in the cupboard). I chose gemili this time around because I was in the mood for something comforting, something very creamy. Gemili with its twirliness (is that a word?) would capture the sauce.

2. Drain the pasta and put it in a large serving bowl. As for the sauce, I don't even measure...just add some creamy cheese - I favor goat cheese myself, crumbled a bit to really get the melting going - and a little cream or milk. Chop up some fresh herbs - this time around it was parsley,basil, and oregano, a small clove of garlic, minced and throw it in the bowl. Grind some fresh pepper over it all, toss and serve. What could be simpler - and there's only one pot to wash.

How cute is that photo! My mother had the same problem with my daughter today - she just wouldn't sleep. When I picked her up after work she fell asleep in the car home (only 10 min drive) and now she wont settle tonight!!! The joys of parenthood. At least grandparents can give them back at the end of the day!!! Guess what we had pasta tonight too - in between trying to settle Lowen to sleep

What a sweet photo! That's a keeper.

Pasta is definitely my go-to on nights when I just don't feel like making anything else after a busy day. Generally, I just melt up some butte in it, but I like your cheese idea better.

Great pasta recipe (or non recipe). He is the cutest thing ever! And yes, I fully accept twirliness as a word and plan on using it in the future!

When I just don't have the energy, I simply roast vegetables, tossed in a little olive oil with salt and pepper sprinkled on them. That carmelizaion always seems to hit me in the right spot.

Your grandson is just adorable!!!!!
