Pasta e Olio - My Kind of Comfort Food

Me and my cutie. Don't you love his cute new rubber ducky boots? He's going to camp with his mommy and daddy and I couldn't resist. It's too bad I didn't take a video when he tested them out...the cutest drunken sailor ever!

It's been a fun, crazy busy week at our house. My younger daughter is in from Toronto. She's going to spend the summer being Boaz's nanny - Mommy is the Camp Director. They all just left today, and it's been non-stop for a week. So naturally I wanted to make something very simple, very easy and very comforting...

When people say "comfort food", many people think pasta...but even there, we all have a different take on what makes it "comforting". For some it's a hearty bowl of soup with long skinny slurping noodles and for others it's soup with some sort of dumplings. For others it might be something like Pad Thai or something baked like lasagna, stuffed shells...I could go on, but you get the picture. For many of us who grew up anytime after the 1950's in North America at least...Kraft Dinner is the ultimate Mac 'n Cheese comfort food.

Truth be told...they're all wonderful to me, but I'd prefer to do this over anything else...


Nothing is easier and nothing (to me at least) is tastier. This time I used it as a side dish to our grilled rib steak. Now that's a comforting meal!

On the weekend I made that awesome Shrimp Ravioli with Roasted Tomato Butter Sauce which was phenomenal and my family may have found it comforting, but it took me most of the afternoon to make it and that to me is not quite the same experience.
