When Only a Chicken Will Do

I love getting tons of cookbooks, don't get me wrong. Flipping through page after page of gorgeous, interesting dishes...what's not to love! Trying out fantastic new ingredients you never heard of...even more fun!

But every once in a while, I need to just make up a dish without a recipe...like lunch (which wasn't worthy of a photo, but tasted delicious)...thrown together salad from left overs like strips of grilled steak, chickpeas, last of the tabbouleh, marinated bocconcini, herb grill oil and apple cider balsamic vinegar. I munched on this while deciding exactly what to do with the chicken I bought today.

Never go shopping when you're hungry! But..but...but...The chicken looked so plump and lovely, I couldn't resist. Plus, tomorrow Joanna & Boaz are doing another sleep over and chicken, hot or cold is so easy to help create the perfect spontaneous meal, especially for an angel who's finally decided that he doesn't like everything.

And tonight for dinner, I'm making a salmon dish from another new cookbook...more about it tomorrow...to go with the fantastic fiddle heads I bought at the market.

But this post is all about the roasted chicken....this time I used some olive oil, chopped rosemary and garlic to rub over and under the skin and a clove of garlic, half a lemon and one sprig of rosemary with some salt and pepper for the cavity.

I agree too! We had a great roast chicken last week, done with lemon and rosemary. Delicious.

Yes I agree too :) I also love adding basil under the skin before i roast it... Mmm.

That cherry chipotle sauce sounds really good too!

My mouth is watering I can't wait for dinner!
