Presto Pasta Night Roundup #59

I want to apologize up front for babbling, incoherence, unfinished thoughts, and most importantly any missing entries. It's just that the flu I had has turned into pneumonia...sounds more dramatic than it is, but I'll use it for pity. So without further ado...here are the real stars.

Ching, of Little Corner of Mine is a first time PPNer and just missed last week's roundup. Look at her stunning Seafood Pesto Spaghetti! She also wants some ideas for other uses for pesto...leave her your tips in her comments.


Kevin, of Closet Cooking (and I can never get the image out of my head of him in a tiny cupboard preparing gorgeous meals) shares a fantastic dish of "left overs". There is nothing like pasta to to take odds and ends and make a magical dish. Check out his Pasta with Sausages, Roasted Red Peppers, Olives and Goat Cheese.


Newcomer Sarah of Homemade shares this terrific dish of Penne with Roasted Eggplant & Tomatoes


Randi of Oh Kitchen, What Won't You Do? made a Scallop Pasta for the first time and it looks wonderful.


Somehow I missed Daphne of More Than Words last week...so sorry! Here's her fun Tom Yum Cashew Noodles. I wonder if the Asian store here in Halifax carries Tom Yum paste.


Wiffy of NoobCook is another first time PPNer and she shares this Mango Salsa Pasta that skips Spring altogether and jumps right into Summer.


Dharm of Dad, Baker & Chef shares this glorious dish of Spicy Mango Salad with Prawns that his wife created...sounds like a perfect team in the kitchen. It even gives us a photo step-by-step.


Kitchenetta of Got No Milk is busy preparing for Passover, but she shared an old favorite of hers...Italian Chock Full of Vegetables Tomato Sauce.


Mochachocolata-Rita splurged with this dinner...Steak & Tortellini with Creamy Mushroom Sauce. Everyone needs supreme pampering sometimes! This is a perfect such dinner.


Alisha of Cook, Craft, Enjoy shares a lovely Pineapple Ricotta Kugel. I could go for some right now.


Apu of Annarasa, delivered this comforting dish of Spinach & Mushroom Rotini.


Katie of Thyme for Cooking actually has tulips in her garden. I'd hate her if she didn't feed us so well every week. This time it's a Simple Pasta with Fresh Herbs, which are also starting to sprout.


Newcomer, Mari of Mevrouw Cupcakes brings the perfect dish...Tortellini with Ham & Peas. It's fast, easy and comforting...and besides the green also makes it fun!


Pam of Sidewalk Shoes brings Mushroom Stroganoff that has me wanting to lick the screen.


Ricki of Diet, Dessert & Dogs gave me a good laugh followed by a great dish of Spicy Red Pepper Pasta.


Sher of What Did You Eat? presents this Tomato Basil Pasta with Irish Butter...there are no words...check it out.


Becke, the Columbus Foodie made Beef Stew in her pressure cooker and it looks awesome especially served with cute pasta wagon wheels.


Chris of We (Heart) Food sent in this very healthful, very pretty dish that Lisa made...Tofu with Greens & Noodles


And for me...I thought I'd share a Passover dish of Spinach, Matzoh Lasagna. No excuses for not making pasta just because we can't use flour. My daughter and I were actually going to make our own pasta - we found a recipe using cake meal (finely ground matzos) but everyone's been sick with flus, so perhaps next year.

My apologies to Tigerfish of Teczcape...you can tell how sick I was if I forgot to add her unbelievable Arrabiata with Shrimp...this will definitely be first on my list after Passover....I know what is a nice Jewish girl doing eating shrimp...answer....enjoying it immensely

Hope you are back to 100% very soon! I've never been a huge pasta eater but because of you I find it often on my mind :) I'm thinking up a recipe for next week.

Hope you are feeling better. (I always forget about the shrimp... my good friend, also Jewish, also eats shrimp. Won't touch the ham, tho...I get easily confused)
