Even Passover Gets Pasta

Only another 2 days until Passover starts and this year I promised a bunch of dishes in advance for my Jewish friends. Somehow....flu turning into pneumonia translates into little energy. So this post will be short but delicious.

I actually wrote about this Passover Spinach Lasagna last year, but it's definitely worth repeating. Instead of pasta sheets, think layers of matzoh. I found the recipe doing a Google Search...Houston Chronicle. Check out this year's article - no pasta but some great dishes...roasted chicken with candied lemon sounds lovely and the artichoke dish reminds me of this one I recently made - just substitute matzoh meal for bread crumbs. Apparently this dish is from Joan Nathan's book The Food of Israel Today....obviously now on my must have list. She's one of my fave Jewish cookbook authors.

The dish I really wanted to make (and perhaps still will) comes from another of my favorite Jewish Cookbooks - Cucina Ebraica is called Scacchi - a meat & matzoh pie and if you have the book, the recipe is on Page 150. Ground beef, pine nuts, onions, raisins, cinnamon....even feeling sickly, this filling sounds most appealing.

Ruth, could you have timed your pneumonia any better? Seriously, hope that you are feeling better soon - that's a horrible illness.

Thanks for the Passover lasagne posting - I've never made a matzoh lasagne, but now it looks like I have a good reason to try. Looks delicious!

Thanks, Ladies for the good wishes. I certainly did pick a pathetic time to get sick...my cutie grandson who decided to share with his mommy and grandma thought it was a good thing to share ;-)

The recipes really are all very tasty.
