There's a new monthly food blogging event in town....No Croutons Required created by two wonderful bloggers...Lisa of Lisa's Kitchen and Holler at Tinned Tomatoes. Every month will have a different theme and this month it's Vegetarian Soup.
If you know me, you know that I'm making efforts to introduce more vegetarian meals into our diet. That said...I often still slip and use chicken broth rather than vegetable broth to make soups or stews. It's a start, okay...I used to feel the need to add chicken or sausages or some other kind of meat to every soup or stew. I do make a fantastic roasted vegetable stock when I have time and I have the odd boxed vegetable broth on hand. But I haven't really found one I love enough to keep a stash on hand.
Soooooooooooo, it's wonderful that I found another vegetable broth in this fantastic soup that I can make, although "whip up" is hardly an option. It's based loosely on a recipe I saw in the latest Cook's Illustrated Soups & Stews 2008. Without it... (big sheepish hanging of head) I would have used chicken broth without batting an eye!
I'd love to hear what your favorite store-bought vegetable broth is so I can give it a try.

I love garlic, but at 1 whole head and 4 large cloves...I thought it might be too overwhelming. In fact it was mellow and rich...delicious!
