Very Veggie Dinner

Last week was the deadline for Weekend Cookbook Challenge - Veggin' Out and I spent two weeks with vegetarian books scattered everywhere. I did come up with something and it made me decide to cook more vegetarian, at least vegetarian style, since sometimes (like last night) I still use chicken broth instead of vegetable stock. It was just that the chicken broth was sitting in the fridge...what was a girl to do?

Anyone who knows me will be surprised that I cooked with tofu. I know...you're thinking "that's tofu in the photo? It looks like toast", but it's not... it's Marinated Tofu "Steaks" accompanying the Winter Veggie Curry. My Honey said it tastes like chicken. Actually, I'm not sure about that exactly but it's delicious and I can't wait to make it again. I marinated it and then "breaded" it with a very interesting coating that's a mixture of wheat germ, garlic powder, pepper and flaked nutritional yeast, which I had never heard about before.

So here's to more vegetarian dishes at our house...how about yours?

I'd like to find some interesting recipes that don't include meat. Last time we bought tofu, it went bad in our fridge waiting (for a long time) to be cooked.

You've been tagged!

I'm glad you enjoyed your foray into vegetarian cooking. Exposure to new styles of cooking and different foods is what makes food blogging such fun. I really appreciate the effort put forth by bloggers like yourself in organizing challenges such as Weekend Cookbook Challenge and your Presto Pasta Night - It inspires us to get creative and try something new!

Psychgrad...I don't know how many packages I've thrown out, but now that I found this recipe...things will be different. Thanks for the tag. I'll be getting to it in a bit.

Lisarene, thanks for dropping by. I do love experimenting with different food and different styles of cooking.

Most of what I cook has very little meat. Even my "meat dishes" typically use it only as a flavoring (like Spam fried rice!). I'm not against meat by any means, but I feel better when I eat mostly grains & veggies.
