Very Veggie Dinner

Last week was the deadline for Weekend Cookbook Challenge - Veggin' Out and I spent two weeks with vegetarian books scattered everywhere. I did come up with something and it made me decide to cook more vegetarian, at least vegetarian style, since sometimes (like last night) I still use chicken broth instead of vegetable stock. It was just that the chicken broth was sitting in the fridge...what was a girl to do?

Anyone who knows me will be surprised that I cooked with tofu. I know...you're thinking "that's tofu in the photo? It looks like toast", but it's not... it's Marinated Tofu "Steaks" accompanying the Winter Veggie Curry. My Honey said it tastes like chicken. Actually, I'm not sure about that exactly but it's delicious and I can't wait to make it again. I marinated it and then "breaded" it with a very interesting coating that's a mixture of wheat germ, garlic powder, pepper and flaked nutritional yeast, which I had never heard about before.

So here's to more vegetarian dishes at our house...how about yours?
