Presto Pasta Frittata

Over the last 14 weeks, at Presto Pasta Nights, we've had pasta in soups, pasta in salads, pasta baked in the oven, pasta quickly stir fried on top of the stove, and even microwaved pasta. We've enjoyed pasta from every nation and they've all been delicious.

What we haven't had on any of the Presto Pasta Night Roundups is something I typically do with leftovers....make a Surprise Frittata. I've got a few variations - all of them tasty, but my favorite involves pasta. And this past week was no different. So the BBQ Pasta Diablo turned into an awesome brunch.

Nothing could be easier to do...

Take a non stick skillet..I use the small size to feed 2-4 people because I like the frittata to be thick, not flat like a crepe or omelet. Heat a little bit of olive oil and saute the leftovers just to heat them up - 3-4 minutes should do the trick. Then I add some beaten eggs - usually 2 per person and one for the pan, let it cook until the eggs are mostly set, but still a little runny and add a handful of whatever kind of cheese (or none at all).

Stick the pan into a preheated oven at 375°F/190°C and bake for about 10-15 minutes. The top will be golden and crispy when done.

Flip the whole thing onto a plate - now the crispy noodles will form the base.

Cut it into wedges and serve with a simple salad.

I love frittatas - never thought of putting the leftover pasta in - not that there is ever leftover pasta, but I could make some...

Thanks all, it's often the only way I can get to use up all the leftovers from the week. My honey is not the biggest soup fan, so that's out. But frittatas...well that's another story.

I've seen stuff like this before, but I always thought it wouldn't taste good because of the crisp noodles. But seeing it here, I know it must be great!
