Fresh Produce - Lemons are It

Marta, the Italian in the US has started her own food blogging event. This one focuses on fresh produce and in her neck of the woods, it's lemons.

I was born in Montreal, Quebec and lived in Ottawa and Toronto, Ontario for quite a long time and now I'm living in Halifax Nova Scotia. Why am I telling you this? Because I have never seen lemon trees growing anywhere near me....lots of fruit trees in the Niagara region...cherries, pears, plums, peaches (so good) and apples everywhere...but no lemons. The only time I ever saw a lemon tree up close and personal was in my cousin's back yard in sunny Florida. That said, I am always using lemons, in salad dressings, in marinades and even in a biscotti I recently made.

Not only are lemons not local, this week we seem to have eaten out more than in and none of my dishes really starred lemons, but I really did want to contribute to the Fresh Produce Event. I thought I would just share a few of my favorite lemony chicken recipes......


Grilled Cilantro Citrus Chicken
Afterall it is BBQ season - the marinade works great on shrimps & scallops too


Chicken Piccata
Just because my mouth waters just thinking about it




Unbelieveably easy especially when it's too hot to do much of anything

So I apologize for not sharing a new, new creation, but I hope you enjoy these just the same.

o my gosh that grilled cilantro citrus chicken is gorgeous...You know what? I am playing with making a chipotle whole wheat pasta, probably a fetuccini shape and that chicken would be incredible over it.. thanks!

Anh,..I certainly do think lemon goes great with chicken...and seafood...and lamb...and grilled vegetables...and..

Marye, I do hope you're planning on sharing the pasta dish with Presto Pasta Nights. The chipotle whole wheat pasta sounds awesome.

Can you tell us more about the one with what might be Bok Choy and mushrooms? Looks interesting....

Kjp, I looked and looked for the actual post for the baby bok choy. There are a couple listed on the "vegetables" page, but none of them exactly fit. Here's what I think I did (always adlibbing)
handful of dried shitake mushrooms reconstituted in hot water for 30 minutes. Reserve the liquid.
4/person baby bok choy cut in half lengthwise
1 tsp grated fresh ginger
2 cloves garlic, minced
1 medium onion, diced
1 tbsp vegetable oil
1/4 cup soy sauce(little more, little less)
Saute the onion, garlic & ginger over med heat until the onions are translucent. Don't let the garlic burn.
Slice the mushrooms and add to the pan with the bok choy. Add some soy sauce and some mushroom liquid and saute until the green part of the bok choy gets limp and the white part starts to soften. Add liquid as needed. Just takes a few minutes.

Someone once told me that lemons only grow north of the equator and limes grow south of it. Do you think it's true Ruth?

Traveller One, according to Wikipedia, both lemons & limes are found everywhere...although the map seemed confusing. I do know one of my favorite desserts is Key Lime Pie made from limes found in the Florida Keys.
