Under the Wire for Weekend Herb Blogging


Life is pretty crazy around here but I did want to quickly add an entry for this week's Weekend Herb Blogging, created by Kalyn of Kalyn's Kitchen. Kate at Thyme for Cooking is hosting.

I just bought the new (at least here in Toronto) Donna Hay Magazine, Winter Issue #28. As usual, she (and her staff) inspire me. She did a wonderful beef and pork meat loaf wrapped in prosciutto and filled with wonderful fresh oregano and basil. Instead of the usual bread for added filler, she used couscous. Since I've been doing a ton of pasta dishes lately and lots of eating out to with my last trip to Montreal, I decided to regroup a bit with South Beach Dietfriendly food. So here's my version with lamb instead of beef & pork.
