Lebanese Delights - Salmon & Fatoush

I know it hasn't looked like it lately, but I really do cook more than pasta! Although, please check back tomorrow for an Asian inspired pasta.

I've been meaning to make this dinner ever since I bought Feast From the Mideast- a great cookbook by Faye Levy. Yesterday was very spring-like here in Toronto and, naturally that had my taste buds turning to lighter, fresher fare. Plus, this dinner was unbelievably easy to prepare. Life's crazy these days, so that's important.

It's been a while since I joined in Kalyn's Weekend Herb Blogging fun (Becky from Key Lime & Coconut is hosting this week) and this dinner has tons of wonderful herbs - lots of mint and parsley and something new to me - ground sumac! One bite of the salad, instantly transported us all into summer. My daughter said I outdid myself with it. I give all the credit to Faye Levy, author of Feast From the Mideast. And it's such a great South Beach Diet friendly dinner too!

I agree with Sher, this looks fantastic. I love sumac. One of my favorite middle eastern restaurants here has it on the tables.

I love salmon and your dish looks very yummy to me. I didn't know sumac before but it sounds interesting.
