We're home and everyone is doing well. This is what a big boy Boaz was at just 2 days old. Sorry, but you'll have to put up with "Grandma" for a bit with cute pictures of Bo before I get to the food. And speaking of food, I thought that for the next little while I'd focus on foods that really help new mothers get their strength up.
Jo's milk is a little slow coming in (she's planning on breast feeding ) so a friend of hers suggested dill and fennel. Apparently, they stimulate milk production (or at least its onset). So what could be better than some homemade chicken soup simmered with fresh dill and served with dilled matzo balls (is "dilled" a word? I'm quite pooped myself from all the excitement so my posts are probably not that coherent. At least they'll give you a chuckle.)
Roasted Salmon & Dill with Lemony Dill Mayo continues the dill theme. There's nothing faster and easier than roasting some fish fillets in a hot oven. The whole process takes about 15 minutes and if you make a double batch, you have some great quick and easy meals for the next day or two. Add mayo, some salt and pepper and even more dill and you have a delicious sandwich or wrap. Or add some chunks to a salad or pasta. All it needs for dressing is a little olive oil and lemon juice.
As for the fennel...so far she's just been munching on some fennel (I love that licorcey flavor) dunked in a delicious purchased dill dip. But we'll be adding it to salads (personally I use it often instead of celery) like this Endive and Fennel Salad, but it adds a "je ne sais quoi" deliciousness to tuna salad sandwiches, chunky salads...
