Great Meals Fast - a Cross Post


I don't usually do this, but I think given the time of year - everyone rushing around like a lunatic, getting stressed out by all the things on our plates (no pun intended), everyone might be interested in using as little time as possible to prepare great meals. So, I'm cross posting to my AskRuth blog, check out some ideas here to help you out.

Pictured here is a quick oven roasted balsamic chicken breast with pan roasted broccoli. Marinating the night before takes 5 minutes and roasting time takes 20 the night you plan on serving it. How simple is that?!

Because adding herbs to marinades and glazes is really the secret to great flavor, this is a great WHB entry - Kalyn started it and Fiber of 28 Cooks is hosting this week. It's South Beach Diet friendly too - Bonus!

these are lovely serving plates are they glass or melamine do you use them for your regular meals

Hi Mahek, the plates are china and I admit, I use them mostly to take pictures. I like the shape and the fact that they are plain so they don't take away from the presentation of the food.

My everyday china (crockery) is round, white and has a thin blue rim. I'll try to use them in an upcoming post.
