Chicken Loaf for South Beach Dieters

Laurie, who sent me some gorgeous tomatoes a while ago, also sent me a recipe for meatloaf using ground chicken. When she emailed it to me, she said that she was "herb challenged" but was sure that I'd add something to give it more zip.

Who could resist such a challenge and it gives me a great entry for this week's Weekend Herb Blogging hosted this week by Kalyn herself. And even better, it gave me an opportunity to take an already healthful version of meatloaf and make it really South Beach Diet friendly.

The biggest change I made to Laurie's recipe was to use large flaked oatmeal instead of bread crumbs. I also used a spicy mustard (this time a chipotle mustard, next time horseradish mustard) instead of ketchup, and of course lots of herbs. This time around I used some lemon thyme. Next time around - who knows - oregano, maybe.

I like every thing about this! Love the idea of the cabbage in here, love the sub of oatmeal, totally agree with the idea to substitute red peppers, and mustard is more SBD friendly than ketchup. Sounds like a keeper!!

Every now and again I delve into meatloafs...I love the texture and taste - served with some crusty bread and home made chutney, it's wonderful.
