Tuscan-Style Ribs - Different & Delicious

In a recent post I promised I'd share the Tuscan-Style Ribs with Balsamic Glaze from Fix it and Enjoy it!. I was intrigued because it's so different from the ribs I'm used to. Normally I go for ribs with a sauce like these or two that are in my own cookbook Every Kitchen Tells Its Stories, Recipes that Warm the Heart. My favorites usually are sweet, spicy and saucy, but I'm always up to try something different and these caught my attention because of all the wonderful herbs used in the rub - rosemary, thyme, sage, coriander, fennel seeds, paprika, allspice...wow! And not only do I love it because it tastes good, it's South Beach Diet friendly (no sugars and baked suspended on a rack over a baking sheet to let the fat drain off) and with all those herbs, I get to participate in Kalyn's Weekend Herb Blogging Event which is hosted this week by Christa over at Calendula & Concrete

They were, in fact wonderful. Our first reaction was that they reminded us of Montreal-style smoked meat, not "sparerib-like" at all but very interesting and definitely a keeper.

I served it with a salad of romaine hearts, Parmesan shavings, purple scallions with a spicy vinaigrette along with fresh corn on the cob that we bought at a farm in Prince Edward County - but more of our Saturday adventure tomorrow. In the meantime, I hope you enjoy the ribs.
