Finally Pasta with Tomatoes & Olives

Strange title you might say, but let me explain....

My Honey has never been a fan of tomatoes, so even though I've seen versions of this simple but oh so tasty dish in many magazines and prepared by some of my favorite famous people like Donna Hay, Ina Garten and Nigella Lawson, to name a few, I've never made it. But ever since we started on the South Beach Diet, and he's become a fan. It all started because, when eating breakfast of scrambled eggs, back bacon (or Canadian Bacon) he would say "no potatoes" and they'd usually stick some tomato slices on the plate. Not having bread or potatoes actually pushed him into trying the tomatoes, and guess what.....he liked them!

So my next hurdle was the pasta part of the dish. It's hard to make pasta without the noodles and I really like my noodles the traditional way - made with semolina flour. But yesterday at the grocery store I saw Catelli Healthy Harvest Multigrain Spaghetti with a fiber content of 9 g, which is perfect for South Beach Diet (at least Phase 2) and I thought I'd give it a try.

All I can say is...we licked the bowls clean and I can't wait to make it again. The pasta was perfect because it really added a wonderful toasty element to the flavor of the sweet little tomatoes and the salty olives.
