Cucumber Yoghurt Salad – Kheera ka Rayta

Rest time: 5 minutes
Chill time: at least 1 hour
Ingredients:
1 cucumber, peeled, seeded and diced
1 tbsp onion, finely chopped
1 tbsp salt
1 tbsp fresh coriander/cilantro, finely chopped
1 cup plain yoghurt
1 tsp, ground cumin, toasted for about 30 seconds in a small dry skillet
Directions:
1. Combine cucumber, salt and onion in a sieve suspended over a bowl. Mix well and let it rest for 5 minutes or so.
2. Squeeze excess moisture from the cucumber mix.
3. In a separate bowl, combine the yoghurt with the cumin and mix well.
4. Place the cucumbers in a bowl and add the cilantro. Toss well and add the yoghurt mix. Taste for seasoning, cover and refrigerate for at least one hour before serving.
This is a great side for any spicy meat dish – very refreshing.
