Oven Roasted Balsamic Chicken - South Beach Diet Style

Oven Roasted Balsamic Chicken Breasts

Adapted from South Beach Diet

Prep time: less than 5 minutes
Marinating time: 1-24 hours
Roasting time: 20 minutes
Serves 1

Ingredients:
1 boneless chicken breast, flattened so that the chicken cooks evenly
1 tsp fresh rosemary, chopped
1 clove garlic, minced
½ tsp ground black pepper
1 tbsp + 1 tsp olive oil
1 tbsp balsamic vinegar

Directions:
1. In a small bowl, combine the rosemary garlic, 1 tsp of olive oil and pepper and make a paste. Spread over both sides of the chicken and refrigerate for at least 1 hour

2. Preheat the oven to 450° F/230°C and line a small roasting pan with tin/aluminum foil (just makes clean up a breeze). Chicken should be a room temperature before roasting.

3. Drizzle with a 1 tbsp olive oil and bake for 10 minutes. Flip chicken and continue to roast for another 10 minutes or so. Chicken is cooked when juices run clear. A meat thermometer will register 160°F/72°C. Drizzle balsamic vinegar over the chicken and serve.

Serve with pan roasted broccoli or asparagus, or wilted baby spinach with lemon zest
