An Amazing Pesto for Presto Pasta Night


UPDATE AFTER DINNER:

One word...SCRUMPTIOUS! Now, dinner was supposed to be a simple salad to accompany the Grilled Salmon with Citrus Salsa Verde from Giada De Laurentiis' newest book Giada at Home: Family Recipes from Italy and California that I'm lucky enough to be reviewing. It's amazing and will definitely be my go to summery salmon dish...I'm already planning picnics with it as the star. Just grill at home and serve somewhere heavenly.
But I'm hosting Presto Pasta Night this week and I couldn't resist her Fusilli with Spicy Walnut and Arugula Pesto that's a side dish for tonight's Grilled Salmon with Citrus Verde. I'll update with recipe links AFTER dinner and more photos. But I really had to give you a head's up, because it's amazing. UPDATE: I used multigrain fusilli which often overpowers the sauce, but the pesto stood up just fine....a perfect marriage. Truly, either one alone would have been fantastic with a salad. I just pretended I was at a buffet and sampled them both.

I'm not the biggest walnut fan - I prefer pecans and almonds, but this...is so good, I wanted to just eat it right out of the bowl. I know it will be able to stand up to the multigrain fusilli that often overpowers a sauce. I also know it will be fantastic as a slather on grilled goat cheese sandwiches or over grilled or roasted salmon or tilapia.

Oh my, oh yes, on a grilled goats cheese sandwich please, that just sounds so divine. Yum!

That pesto does sound fantastic, I bet the peppery arugula is a wonderful contrast the earthy walnuts, perhaps drawing out their sweetness? yum :)

I'm not the biggest fan of walnuts either - but I'm with you. Walnuts with pasta are wonderful!

This pesto sounds delicious.

Pesto tastes good slathered on anything doesn't it? ;)This one looks super yummy and perfect for spring!
