Lola doesn't have a blog, but she shared this great sounding dish with the rest of us...(sorry no photo yet, but when I make some, I'll add it here)
1/2 lb farfelle pasta
6 bacon slices
1 28-oz diced tomatoes
1/4 tsp. crushed pepper
3 c arugula or baby spinach
1 c sliced scallions
1 c thinly sliced basil
1/4 c dry white wine
1 c Parmesan
Cook pasta, al dente
Cook bacon in heavy skillet until crisp. Keep 3 TB drippings, add tomatoes and crushed pepper.
Sauté until tomatoes soft, about 2 minutes.
Add arugula, onions, 1/2 c basil and bacon.
Sauté until basil and arugula just wilts, about 2 minutes.
Stir in wine. Simmer. Add pasta, mix in 3/4 c Parmesan and rest of basil (1/2 c)
Cook until cheese melts and coats pasta about 2 minutes.
Add salt and pepper. Sprinkle with 1/4 c cheese.
