While it's true that everything was done in skillets on top of the stove, very little oil was used - honest!!! This is a very South Beach Dietfriendly dinner that I whipped up in about 20 minutes.
Chimichurri Chicken breasts starring fresh cilantro & jalapeno peppers
Cauli-fried "rice" - starring fresh parsley & oregano & a handful of finely grated Parmesan cheese
Green beans with Shallots & Basil
So naturally I had to share with Kalyn's Weekend Herb Blogging (one of my very favorite events). This week WHB will be hosted by Rinku over at Cooking in Westchester . I always look forward to Sunday evening or Monday morning to discover what everyone else is doing with herbs.
By the way...I was lucky this week, I scored fresh basil (that actually looked and smelled wonderful), mint (so crispy), sage (very velvety), oregano (nice, plump leaves), young thyme, really healthy dill (a rarity here in Halifax), the greenest parsley I've seen in a while and of course...a huge bunch of cilantro. I'm in heaven!

You live in Halifaz and got all THAT!? You were lucky...and great looking chicken. I have got to remember to try tht cauli-flied rice... Of course, that would involve remembering to get a cauliflower....
The Chimichurri chicken sounds really tasty.
