Potato & Leek Sacchettini for Presto Pasta Night

I'm a little late with this post, but...hey.. it was worth the wait. Earlier in the week I couldn't resist these cute little bundles in the grocery store...Potato & Leek Sacchettini by Olivieri . Hopefully you can find their products near you, because they are delicious.

And tell me...aren't these little bundles of potato & leek too adorable to resist?! So every time I opened the fridge, they kept yelling..."Cook us, cook us!" and finally, last night I did. I was feeling under the weather, so not really in the mood to be overly enthusiastic in the kitchen. Plus these little cuties needed very little to dress them up. I really did want to taste and savor the filling. Making this dish took as long as it took to boil the water, plus the 3 minutes to cook the pasta. When I told my Honey (who felt sorry for my feeling poorly) what I was making, he said "Don't bother - that looks like too much work. Why don't we just have scrambled eggs and toast?" I said...that would take longer!
