Presto Pasta Night Tomorrow and Lumaconi Tonight

Tomorrow is Presto Pasta Night , as many of you know, and it's Thursday and I haven't done a thing about a dish of my own. Earlier in the week I went out to buy some orzo (I'm running low and found this great Golden Lentil Stew recipe that calls for some...but that's for another day). No orzo but sitting on the shelf were these gorgeous giant macaroni shells called Lumanconi which caught my eye.


Aren't they cute? And won't they be perfect to sop up some thick sauce? Think macaroni shells on steroids. But here's the thing...I think I'm coming down with a cold so I want comfort food and I don't want to fuss. What's a girl to do....I could do scrambled eggs with goat cheese. I even have fresh homemade pesto in the fridge. Or I could heat up some of that Savory Autumn Stew we had for supper last night (which was delicious, I might add). All good choices, but tomorrow is Presto Pasta Nights as I said.

Thank goodness for Classico pasta sauces (I always have one or two kinds in the pantry for exactly when I'm too tired, too busy, too stressed, too in need of comfort food to go through the actual food prep...you know, the days when you want your mummy to be cooking for you). So here's what I did....


Mushroom Lumanconi - Ultimate Comfort Food in a Hurry

Boil up the lumanconi.

Saute sliced mushrooms with some chopped onion and garlic (because I still need to make the sauce my own).

Add some of the sauce (this time Florentine Spinach & Cheese) to the mushroom mixture.

Drain the pasta well and toss into the pan of sauce.

Voila and all done in 15 minutes.

Lovely dish, unfortunatelly I did not make any pasta dish this week, except Macaroni & Cheese... Maybe next week :)

Looks like a great addition to PPN Ruth. Food doesn't always have to take hours in the kitchen to be perfect!
