I often get kitchen related questions from people over at AskRuth. Sometimes they're about kitchen tools, sometimes they're about cooking. I even have a video clip on what to look for when buying knives and one on chopping. Today I received this email from a pasta lover who's husband is allergic to cheese.
I have a question about pasta dishes. I love cheese, but it takes a lot of imagination and ingenuity to think up tasty non-cheese pasta dishes for my husband who is allergic to cheese. (I even tried making a non cheese pizza for him once. It was an abysmal failure. With pasta dishes, as with pizza, it somehow loses something in the taste bud translation to just leave cheese out of the equation. Do you know of any yummy non cheesy pasta dishes you can post?
How sad is that! So I'm asking everyone out there to help us out. If you have a great, non-cheese (and I'm assuming that also means no milk or cream) pasta dish, let me know and I'll post a special roundup with links to your non cheesy but still delicious pasta dishes.

None of the pasta that contain fish use cheese. It simply isn't done. That includes orecchiette with broccoli or broccoli rabe, because the invisible secret ingredient is anchovies.

Most of my pasta salads don't have cheese - actually, looking back nothing I'v submitted for the last 2 months has cheese.
As for hot pasta dishes mine are about 50-50.
If she stays away from the tradtional red sauces it's easier to stay away from the cheese ;-)
I HAVE A PASTA RECIPE WITHOUT ANY CHEESE (except frome the fact that one can add some grated parmesan before serving!!!) so i give you the link of this recipe I made months ago

What a great cause you have there! Whenever I make pasta with meat sauce, we never use cheese (mostly because we can't - we have a kosher kitchen) but it always tastes just great without it!

I would serve up the classic Arrabbiata or as we call it in my house Penne with tomato and chilli sauce and it really doesn't need to be topped with parmesan! A grinding of black pepper would do!
