Like Mother Hubbard - The Cupboard is Bare


The road to dinner.....after all I do need an entry for Presto Pasta Nights.

What can I say, my intention was to go grocery shopping on Wednesday after the kids left for camp and replenish the larder. Somehow time (and a horrible headache) got the better of me and by supper-time yesterday, there wasn't very much left in the fridge....a bag of baby spinach that would work sauteed, but not in a salad, half a red onion, some garlic, an open bottle of white wine and a jar of pesto (normally I make my own, but it's always wise to have a jar in the cupboard for emergencies like this.)

Before doing the South Beach Diet, I don't think I ever thought of using pasta made with anything but white flour. Now we use whole grain, whole wheat and I just bought this box of Kamut & Quinoa "Twisted Pair" gemelli from Eden Organic to try - delicious flavour, by the way.

Plus, my headache kept me from feeling very creative. Fortunately there's no such thing as a bad pasta dish and many can be prepared in the time it takes to boil water. So when I threw together the few things I had on hand, we ended up with a nourishing, healthful, and delicious main course. Too bad we didn't have ingredients for a proper salad to go with it.

Quinoa pasta! How interesting! We just recently graduated to have 'integral' or whole grain available in some shapes... there's hope!
