Fresh Herbs and Back to South Beach

Actually, we're waiting for the kids to come back from their road trip before doing the South Beach Diet Phase One. But that doesn't mean I can't refocus on Phase Two. Plus it's been such a long time since I joined in on Weekend Herb Blogging fun, over at Kalyn's Kitchen.

The herb stars are fresh Rosemary & Oregano.

Because I'm still finding my way (around the house - unpacking; around town - everything else), I kept dinner last night very simple. I just cranked the oven up to 450F/230C and roasted some marinated boneless chicken breasts and cauliflower. I was even too lazy to saute some spinach that I bought just for that purpose. Guess I'll save it for the Canelloni I'm planning for tonight.

Love the sound of this cauliflower recipe. I got a new counter-top convection oven and I'm going crazy roasting veggies over here. Must try this one.

Anytime I see rosemary & oregano in any chicken recipe like that, I'm definitely there :) Wow, you cook during such a busy time, good luck with the move though, cheers !:)
