A Delicious South Beach Diet Plan

There are some challenges to the first phase of South Beach Dieting - like giving up bread and pasta (especially if you do a Presto Pasta Night event every week) and finding snacking foods that are not tiresome. But meals are never a challenge. In fact, they're always delicious. I do apologize that I don't have photos to go with all the meals. I'm still getting a hang of my new surroundings and all that means....food is still scrumptious though.

Breakfasts: Day One we had an omelet with smoked sturgeon (I'm not sure if smoked fish is okay or not, but a small piece goes a long way) and feta cheese with some finely chopped green onions and parsley. Day Two breakfast was a frittata with lots of different herbs and grated low fat Mozzarella cheese. Today (Day Three), I just had a hard boiled egg and a chunk of low fat cheddar.

Chickpea & Tuna Salad


Lunches: Truthfully, not my most important meal, so I've already forgotten and had to ask my daughter what we ate on Day One (it's only day three, so you get what I mean). Oh, right...it was delicious - broiled tomatoes with a bit of Parmesan cheese and some freshly ground pepper plus a Warm White Bean & Broccoli salad that Joanna whipped up. Day Two (yesterday) we had a Salad Nicoise which was delicious. Actually, the salad was left over from Ezra's lunch the day before. He purchased it at Pete's - remember how great I said everything was?! We just added more tuna and it was delicious. Today (Day Three) we enjoyed my old stand-by Chick pea and Tuna Salad. I just left out the tahina because it's not Jo's favorite.


Roasted Sesame Salmon

Dinners: Day One...Roasted Chipotle Chili Rubbed Tilapia*, Roasted Asparagus spears sprinkled with some Parmesan cheese and Cauli-fried "rice". Dessert was Chocolate Mousse. Day Two, Joanna's turn to cook had an Asian flavor. Roasted Eggplant & Zucchini in a Lemon Soy Marinade, Roasted Sesame Salmon with and a salad with a Miso dressing. Dessert was Mocha Ricotta Creme (only my Honey likes it). Tonight (Day Three) we're having beef stew, believe it or not.

I found this lovely Phase One friendly version over at Kalyn's kitchen. Mashed turnips to sop up the stew gravy and broccoli quickly steamed and spritzed with lemon juice and tossed with some red chili pepper flakes to give it a kick. Stay tuned for some more Phase One friendly dishes.


* I just rubbed some chipotle rub on the tilapia before roasting it. I put the asparagus in a separate dish and roasted them during the last 5 minutes of the tilapia roasting.
